Assam Mackerel (Fish in Mild Spicy Tamarind Juice)

Assam Mackerel (FIsh in Mild Spicy Tamarind Juice)

Main Ingredient:

3 slices of Mackerel Fillet

Ingredient (A)

14 slices of galangal
Half thumb sized piece turmeric
1 candlenut (buah keras)
1 heaped teaspoon shrimp paste

Ingredient (B)

20 shallots
5 red chillies

Ingredient (C)

3 cups of home made fish stock or plain water
2 tablespoons of tamarind juice
Half tablespoon of sea salt
1 teaspoon of coarse sugar

Method:

Clean the fish and sprinkle some sea salt over it.
Pound Ingredient (A) in the given order to a fine paste.
Add Ingredient (B) and continue to pound coarsely.
Mix the paste and Ingredient (C) in a ceramic sauce pan and boil for 15 minutes.
Add the fish fillet.
Reduce the heat and let it simmer, uncovered till fish is fully cooked.
Serve hot with white rice.

Tips:

If you do not wish to pound the paste, you can use a food blender.
