Chicken in Lemon Sauce

Ingredients:

Marinate Drumsticks

3 pieces of fresh deboned Chicken Drumsticks

1 tablespoon of lemon juice
Half teaspoon of sea salt
Dash of grounded white pepper
2 teaspoon cornflour
Half lightly beaten egg

For Deep Frying

4 tablespoons of Cornflour
Cooking Oil for Deep frying

Lemon Sauce

2 tablespoon of lemon juice
1 teaspoon plum sauce
1 teaspoon coarse sugar
5 tablespoons of water
Cornflour Thickening
1 teaspoon cornflour
2 tablespoons water

Method:

Pat dry the deboned chicken drums after cleaning and marinate them with lemon juice, salt, pepper, cornflour and egg for at least an hour. Refrigerate.
Heat up wok and add sufficient cooking oil for deep frying.
Deep fry the whole piece of chicken drumstick till they turn golden brown and crispy.

Remove and set aside.
Combine lemon juice, plum sauce, sugar and water in a small saucepan and let bring to boil.
Add the cornflour solution for thickening the sauce.

Before serving, cut the pieces of chicken drumsticks into sizeable bites and drizzle the lemon sauce over the chicken.
