Egg Plant with Pork Floss  (Improved Version)


2 medium egg plants (wash and cut into medium slices)
1 packet of crispy pork floss (you can keep the balance to go with bread)

Batter Mixture:

5 tablespoons Plain Flour
1 tablespoon Self Raising Flour
One teaspoon of sea salt
1 teaspoon turmeric powder
250 ml water


Towel dry egg plant slices and marinate with some sea salt.
Dipped egg plant slices into batter.
Make sure the batter is not too runny nor too thick.

Coated well and deep fried till lightly brown and fluffy.
Drain them on a paper towel.

Coat the deep fried slices with a generous amount of crispy pork floss.
Serve while hot.
