Ingredients:
1 ripe pineapple
Half kilo medium prawns (de shelled and deveined)
2 pieces Chinese sausages
Few stalks of cilantro leaves
1 big bowl of cooked rice
2 tablespoons minced garlic
1 packet Spice Paste for Thai Pineapple Rice
Method:
Cut the fresh pineapple into small cubes and set aside.
Diced the prawns into medium pieces.
Remove the outer skin of the sausage and sliced thinly.
Heat large wok with some cooking oil and fry the minced garlic till fragrant.
Add the diced prawns and sliced Chinese sausages.
Stir for two to three minutes.
Add in the diced pineapples and mixed well.
Once the pineapple are thoroughly coated with the other ingredients, add the cooked rice together with the Spice Paste.
Must sure the spice paste is well mixed with all the ingredients and fry for another 2 to 3 minutes.
When done transfer the Pineapple Rice to the rice cooker to keep warm or you can serve immediately.
Garnish with pork floss, cilantro leaves and fried shallots.
For presentation purpose, you can also serve the Pineapple Rice together with the Pineapple.
If you have extra balance of the diced pineapple just add them to the serving plate.
