Introduction:
Though Carp Fish is not a popular fish and icky but tastes good if prepared correctly.
Fresh fish is both a joy and a privilege, and thus the short window of time to enjoy such quality should not be squandered. This includes the head.
Rub coarse salt over the entire Song Fish Head (Carp Fish) to remove the sliminess. Do this a couple of times until the fish is clean.
Bring water to boil in a large pot. Poached the fish head for about 10 minutes or even longer depending on the thickness of the fish.
Drained and set aside.
In the meantime prepare the ingredients to cook with the poached fish head.
The key ingredients for this dish are minced bean paste, chopped spring onions, chopped salted vegetable mustard, minced garlic and chopped fresh red chillies.
Add cooking oil to the pan and sautéed the above ingredients and bring to a boil.
If you prefer to have a thicker gravy do not add too much water. Adjust accordingly.
In a large serving plate, placed the poached fish and add the gravy over the entire fish head.
The salted vegetable mustard and bean paste has sufficient flavour so you don’t need too much seasoning.
Taste the gravy and adjust to your desired taste.
Serve hot.
