Egg Plant with Pork Floss  (Improved Version)

Ingredients:

2 medium egg plants (wash and cut into medium slices)
1 packet of crispy pork floss (you can keep the balance to go with bread)

Batter Mixture:

5 tablespoons Plain Flour
1 tablespoon Self Raising Flour
One teaspoon of sea salt
1 teaspoon turmeric powder
250 ml water

Method:

Towel dry egg plant slices and marinate with some sea salt.
Dipped egg plant slices into batter.
Make sure the batter is not too runny nor too thick.

Coated well and deep fried till lightly brown and fluffy.
Drain them on a paper towel.

Coat the deep fried slices with a generous amount of crispy pork floss.
Serve while hot.

Claypot Egg Plant (Brinjal) with Minced Pork

Ingredients:

2 egg plants
6 tablespoons of minced pork (with some fats)
1 fresh red chilli
2 tablespoons of minced garlic
2 tablespoons of dried minced shrimps
2 tablespoons of Premium Oyster Sauce
1 teaspoon of coarse sugar
1 teaspoon of Sesame Oil

Method:

Cut egg plant into 5cm to 6 cm lengths and quartered each section.
Soak the egg plant slices in salt water (this will prevent the egg plant from turning brown).

Alternatively, you can soak the egg plant with milk.
Heat wok with some oil. Add the minced garlic and minced dried shrimps and fry till fragrant.
Add the minced pork and stir fry thoroughly.
Add oyster sauce, sugar and 2 tablespoons of water and mix well.

Add the sliced egg plant and give a quick stir.
Transfer all the ingredients into a small claypot and cook over lower heat for 10 minutes.

Drizzle with a dash of sesame oil before turning off the heat.
Garnish with sliced fresh chillies and cilantro leaves.
Serve hot.
Goes well with hot plain rice.

My first attempt to prepare the Egg Plant Slices coated with Pork Floss in November 2013.

Discovered this special dish during one of my family Christmas lunch celebration many years back. Egg Plant with Pork Floss was one of the Signature Dish of Chef Kang of Canton Wok.

Recipe for
Egg Plant with Pork Floss

1 to 2 large egg plant (wash, cut into medium slices)
1 packet of crispy pork floss (you can keep the balance to go with bread)

Batter Mixture:

1 cup all purpose flour
1 teaspoon baking powder
Half teaspoon of sea salt
1 egg
1 cup milk

Method:

Towel dry egg plant slices
Dipped egg plant slices into batter
Coated well and deep fried till lightly brown and fluffy.

Drain them on a paper towel.

Note:

By soaking with milk, not only will it reduce bitterness, it will also soak up liquid and cooking oil during the deep frying.
Though many would prefer to coat with salt.
