One piece of frozen smoked duck breast
Half packet of organically grown fresh pea sprouts
One cup of caramelized walnuts

Thaw the smoked duck and pan fry for while.
Do not discard the smoked duck fat oil.
Quick fry the pea sprouts with the remaining oil.
This will enhance the flavour of the pea sprouts.
Sliced the smoked duck breast thinly.
Wash and pat dry the pea sprouts and set aside.
Arrange the pea sprouts on the plate, followed by a few sliced of the cooked smoked duck breast.
Add some caramelized walnuts at the side to complement the salad.

You don’t need any sauce to go with this salad.
You have the slight salty flavour from the smoked duck breast, the duck fats that infused into the pea sprouts and the sweetness from the caramelized walnuts.

1 piece frozen smoked duck meat
Defrozed the smoked duck meat.
For faster cooking, sliced the smoked duck breast and pan fry them.
I used the Happy Call Pan for frying.
(You do not require any oil to pan fry the meat as the duck meat has sufficient fats to prevent the meat from burning).
When done, set aside to cool.
In the meantime, washed and cut the strawberries and green kiwifruits into slices.
In a mixing bowl, add the fruits.
Sliced the cooked smoked duck into piece and toss together with the fruits salad.
You can add mango puree dressing for more flavour or just serve without any dressing.
The refreshing taste of both fruit mixtures compliment the sliced smoked duck very well.
Have fun experimenting and adding more flavour to a piece of frozen smoked duck breast.
1 piece frozen smoked duck breast
(usual packaging there are two pieces of duck breast in each box)
Half box of Cherry tomatoes
Any type of greens.
One yellow and one red Capsicum (sliced thinly)
Seasonal fresh lychees/longans or a canned lychee/longans with syrup
Defrozed the smoked duck breast.
Panfry over low heat the whole piece of smoked duck breast for 8 to 10 minutes.
Leave it to cool and cut them into slices.
Prepare a big mixing bowl and add in all the ingredients for the salad.
Add the sliced cooked smoked duck meat and toss well.
You can add you own salad dressing including mango puree topping.
Another idea is to add some fresh seasonal lychees or canned lychee together with the syrup for a sweeter flavour.
There is no hard and fast rules about preparing salad. The choice is up to you.
1 box of Frozen Smoked Duck (two pieces of boneless duck breast separately packed)
1 packet of Crepe
1 large Zucchini
Hoi Sin Sauce (sweet sauce)
Few stalks of Scallions
You can either buy a packet of frozen smoked duck or purchase ready cooked duck meat from deli section of most supermarkets.
Either you preheat the smoked duck in the microwave oven or pan fry the meat.
Cut the crepe into reasonable sizes if you wish to have a smaller roll.
I normally use one piece of crepe for each roll.
Trim the zucchini into lengthwise pieces and set aside.
Slice the duck breast into smaller slices.
Slice the scallion into thin lengthwise sizes as well. Place them in a bowl of ice water for crunchiness.
Drain and set aside.
On a large plate, place a piece of the cooked smoked duck meat with few pieces of zucchini and scallions.
Add a reasonable size of hoi sin sauce over the ingredients and fold the crepe.
The smoked duck breast meat provides an alternative to Peking Duck and its quick to fix.
